Led the development of a contemporary drinks programme rooted in ingredient research, seasonal structure, and narrative-led flavour development.
Being coastal, we really wanted to pull from the East Sussex shoreline + countryside to create a menu that felt very location-based. The identity is very contemporary + seasonal, with each drink’s story based on not just locality, but on the geography + narrative of the spirits, too.
